What is a quick, vegetarian food that can be made in 15 minutes or less?

I have to do a food preparation presentation in class and I am not sure what to make. I am a vegetarian and I want to make something that is vegetarian. Ideally whatever it is can be made in 10-15 minutes.

  1. I made this sandwich up on a lazy Sunday:

    Sauteed Mushroom Sandwich

    5 Mushrooms

    Sandwich Bread

    Your favorite herbs and spices.

    Oil up a small pan, and cut up the mushrooms. Season them with some salt at pepper. Saute it for about 5 minutes and toast the bread. Add dried herbs and spices to the mushrooms while they’re cooking.

    Putt it all together and Voila!

  2. The other night I wanted something quick so I stir fried loads of veg eg. carrot, broccoli, baby corn, bamboo shoots, mushrooms and I added cubes of tempeh (just happened to be what was in the fridge).

    I added some spices, chilli powder, paprika, cumin, cayenne

    Heated some tomato tortillas and spooned the mix into them, added some hot salsa, was delicious.

    Or

    Do a stir fry. Same with the veg but start with onions, garlic and ginger. Then add veg. (Add some sprouts for nutrition)
    Season with soy sauce, cumin, turmeric, coriander and ginger

    serve with noodles

  4. Sweet Potato Stew

    1 can yams
    1 can black beans
    1 can diced tomatos
    1 onion chopped

    Cook about 15 minutes, serve with crackers or bread :-)

  5. Bean and veggie salad.

    Open a can of beans (try black or pinto) and drain them. Mix in a big bowl with chopped broccoli, carrot, celery, a few pumpkin seeds, olive oil, salt, pepper, lemon juice, balsamic vinegar. Serve.
